Copycat Chipotle Chicken

Here is a recipe for copycat Chipotle chicken:

Ingredients:

  • 1 cup chopped red onion
  • 1 (7 ounce) can chipotle peppers in adobo sauce
  • 1/2 cup fresh lime juice (about 5 limes)
  • 2 tablespoons chopped garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces

Instructions:

  1. Place the red onion, chipotle peppers, lime juice, garlic, cumin, and oregano in a food processor or blender. Process until smooth.
  2. Transfer the marinade to a large zip-top plastic bag; add the chicken. Seal the bag and refrigerate for at least 3 hours or up to 12 hours.
  3. When you're ready to cook, preheat the grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade and discard the marinade.
  5. Grill the chicken for 5-7 minutes per side, or until cooked through.
  6. Serve immediately.

Tips:

  • For a spicier chicken, add more chipotle peppers or chipotle powder.
