Here is a recipe for copycat Chipotle chicken:
Ingredients:
- 1 cup chopped red onion
- 1 (7 ounce) can chipotle peppers in adobo sauce
- 1/2 cup fresh lime juice (about 5 limes)
- 2 tablespoons chopped garlic
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
Instructions:
- Place the red onion, chipotle peppers, lime juice, garlic, cumin, and oregano in a food processor or blender. Process until smooth.
- Transfer the marinade to a large zip-top plastic bag; add the chicken. Seal the bag and refrigerate for at least 3 hours or up to 12 hours.
- When you're ready to cook, preheat the grill or grill pan over medium-high heat.
- Remove the chicken from the marinade and discard the marinade.
- Grill the chicken for 5-7 minutes per side, or until cooked through.
